38 Hour BendOR

A couple of good bike rides. Three nice meals. A little Oregon dirt in our eyes and maybe a little in our blood...stay tuned.

Now we're home and trying to figure out what to do with a bushel of zucchini.

take the bushel to work and give one to each co-worker

and if they say no, then go out to the parking lot and put one in anyone's car who leaves a window down....

LOL...I like the open window idea. In this heat they will be baked zucchini by the end of the day. Or maybe I could walk down the street and put them under windshield wipers.

Marinate spears in olive oil and salt and pepper. Grill with portobellos, green onions, and tomatoes. Fill tortillas with yellow rice, black beans, veggies, and that MExican white crumbly cheese- Cacique, maybe?.
Top with a little salsa and relax with a Pacifico- your in California, Baby!

"Cacique" is an old nauhatal (Mexican indigineous language) word for priest or shaman. I bet they could whip up some yummy cheese.
